Tasting notes
The 2017 Evermore was sourced from very old vines in one of Washington’s most celebrated vineyards: Dionysus (1973). These massive old vines produce fruit with an ethereal earthiness layered with Washington State’s signature density and power. On the nose it leads with black cherry, graphite, cigar box, and cassis. Elegant but firm, its silky tannins frame a palate packed with black currant, bing cherries, spices, fine herbs, and crushed stone. Built for the long term, but singin’ just fine now.
Food pairing:Beef or Wild Mushroom Wellington
Movie Pairing: It’s a Wonderful Life
FOUNDERS’ NOTES:
If they made 100% cabernet sauvignon in Pauillac, it would taste a lot like Evermore. Elegant with all the stuff, not too much. We poured the lovely 2014 at the Wine Spectator New York Wine Experience to rave reviews. Also, really tasty.
